Chac Uayab Xoc has captured some Spike Horns. He intends to eat them for supper. Mak the Knife sneds you in to rescue the Spike Horns. Chac Uayab Xoc will not let them go easily and considers you his appetizer.
Chac Uayeb Xoc is a fish god and the patron deity of fishermen in Mayan mythology. He is mostly kind and benevolent, he fills fishing nets and supplies seafood for any occasion. According the myths Chac Uayeb Xoc would feast on anyone who fell overboard.
Chac Uayeb Xoc seems to be a subordinate deity to the Chaacs, the rain gods of Mayan mythology.
The current list of all the (known) Azteca references are located here.
Although I am well versed in Pop Culture references, I do not claim to have caught them all. Let me know your favorites in the comments and if I’ve missed one you caught, let me know so I can add it to the list.
